We try to sharpen these blades as three-dimensionally as possible and to avoid making dents as much as possible, but we're not very experienced, so if we are not careful, we tend to reduce the blades too much.
If this happens, we will not be able to achieve the ideal "hamaguri-ba", so we will stop finishing that knife and turn it into material for another product in the future.

できるだけ包丁を立体的に、そしてできるだけ凹んだ部分ができないように意識して研いでいるのですが、なにせ経験が少ないために油断するとすぐに減らしすぎてしまいます。
そうなると理想のハマグリ刃を実現できなくなるので、その包丁の仕上げはストップし、将来別の製品にするための素材に回します。
