FM Fujiyama

When a new sharpener stepped in to lend his hand to the Fujiyama line, Konosuke wanted everyone to have an easy way of distinguishing which sharpener was responsible for the blade they owned. Thus, the FM Fujiyama was born. Following in the same footsteps as the Original Fujiyama, the FM is meant to represent the pinnacle of forging and sharpening that is available.

A Chance to Evolve

With the advent of the new sharpener, Konosuke wanted to use this as an opportunity to iterate on the classic Fujiyama. Emboldened by the new sharpener’s incredible talent, they decided on high performance hamaguri grind, and pushed the edge thickness even thinner. The resultant blade performs better out of the box, but is also easier to maintain for the end-user. All of this while keeping the custom ground angles in the spine and choil that are so iconic to the Fujiyama line.

新たな研ぎ職人さんが決まり、フジヤマシリーズと同じ考えで商品開発を進めました。他の職人さんには真似のできない技術、それは刃先を薄く仕上げた繊細なハマグリ刃でした。それにより、購入後すぐに使える切れ味と同時に、研ぎ直しのしやすさも兼ね備えたFMラインが完成しました。峰やアゴの磨きは、フジヤマシリーズの特徴を引き継いでいます。

Blacksmith: Yoshikazu Tanaka / 田中義一 氏

A Legend in the Sakai Knife Craftsmen community, Yoshikazu Tanaka has been the Fujiyama Blacksmith since the product's inception. His obsessive drive for 'perfection' with Hitachi steels is on full display with these knives, no matter what steel or finish you opt for.

堺の鍛冶職人の中でも屈指の腕を持ち、フジヤマシリーズの開発当初から鍛造し続けて下さっています。
日立金属の鋼をこよなく愛し、よりよい包丁づくりを目指すたゆまぬ姿勢は、その品質にも表れています。

Sharpener: Myojin Naohito / 明神直人 氏

When he was 18 years old, he started his career in the knife industry as the blacksmith (who does the forging process) and switched to the sharpener 3 years later.
Through these experiences, Myojin Naohito became a quickly rising powerhouse. His drive to excute, his boldness to explore new techniques, and his constant serch fot criticism through which he can learn and improve has seen his already considerable talent grow by leaps and bounds.

当初は鍛造工程を担う鍛冶職人として18歳で刃物業界での経歴をスタートし、その3年後研ぎ職人に転向してからも、驚きの早さで技術を習得していきました。常に新しい技術を追い求める好奇心と行動力、仕上がりに対するフィードバックからあらゆる改善点を探し続ける姿勢は、常に進化する包丁の品質に表れています。
