ところでひとくちに円砥と言っても、炭素鋼に適したもの、ステンレス鋼に適したものなど、様々な種類があります。

Some circular whetstone manufacturers are willing to accept custom orders according to our own wishes.
They change the abrasive grain blend to match the steel material of the knife to be sharpened.

Our current workshop is small, so we had to make a new circular whetstone that can be used for both types of work.

研ぎたい包丁の鋼材に合わせて、砥粒の配合を変えてくれるのです。

今の自社工房は狭いので、最近新調した円砥は『どちらにも対応できるタイプ』にせざるを得ませんでした。
