Since we have received comments from an unexpectedly large number of people, I would like to tell you a little more about the new product.

思いの外たくさんの方々からコメントを頂いたので、新製品についてもう少し詳しくお伝えしたいと思います。

For this knife as well, we worked with the mindset of “We want to create a product that only we can make,” and we put a lot of effort into the surface finish in particular.

However, as was the case with our own products in the past (before we sharpened them ourselves), our basic premise is that they must have basic performance other than appearance.

We started sharpening only a few years ago, so of course our skills and experience are still lacking compared to other craftspeople.

今回の包丁についても、『僕達にしかできないモノ作りをしたい』という気持ちで取り組み、特に表面仕上げには力を入れました。

ただ、これまで(自分達で研ぐ前)の自社製品もそうでしたが、『見た目以外の基本性能をきちんと備えていること』は大前提としています。

僕達はほんの数年前に研ぎを始めたばかりなので、技術も経験も他の職人さん方と比べれば、もちろんまだまだ足りていません。
