Since the KS-01 was the first knife that we sharpened in-house, we wanted to focus not only on the shape and three-dimensional structure, but also on the appearance of the knife, so we went through a process of trial and error.
By the way, there are two main approaches to creating new knives

ＫＳ－０１は社内で研ぎを行った第一号の包丁なので、形状や立体構造のみならず見た目の美しさにもこだわりたいと思い、試行錯誤を繰り返しました。
ところで、新たな包丁を生み出すアプローチとしては、大きく分けて以下の２種類があります。

(1) Method of devising from the forging process
(2) Methods to be devised after the sharpening process

If we wanted to make a unique knife, I would choose (1) and try various ideas.

However, unlike before, the blacksmiths are now extremely busy, and it is unfortunately quite difficult to get them to try out unusual methods of production.

Therefore, in the current situation where the forging process is not in-house, we have no choice but to choose (2).

ユニークな包丁を作ろうと思えば、①を選択し、色んなアイデアを試してみたいところではあります。

しかし以前と違って今は鍛冶屋さんが超多忙のため、普段とは違う作り方を試して頂くのは、残念ながらかなり難しい状況です。

そのため、鍛造の工程が社内にない現状においては、②を選択するしかありません。
