Practice sharpening the cutting edge
In addition to the staff who started practicing sharpening about a year ago, the younger staff who joined us a few months ago have joined us in this trial-and-error process.
This younger staff member is also practicing sharpening the cutting edge, but he is mainly working on how to finish it with a hand-sharpening whetstone.
本刃付けの練習
１年ほど前から研ぎを練習し始めたスタッフに加え、数ヶ月前から加わった若手スタッフも一緒になって、試行錯誤の日々を送っています。
その若手スタッフは本刃付けも練習をしているのですが、主に手研ぎの砥石で仕上げる方法に取り組んでいます。

As a matter of fact, I myself practiced sharpening that way for quite some time, learning from professionals, but it was really difficult to get a uniform hand angle, and I failed every time I practiced.
Because of this background, it was encouraging to learn that our staff, who had just started sharpening, had developed his skill to a certain degree.
However, hand sharpening still takes time, and it is not possible to finish a large number of pieces.
This means that production costs will go up, so if you want to finish a relatively inexpensive knife as an entry-level sharpening craftsman, it will not be profitable.
So, I suggested him to use Hiramai (horizontally rotating circular grinding stone) and grinders, etc., which I had learned from a craftsman before.
I was not able to sharpen the edge by hand at all, but for the first time in my life, I was able to produce a reasonable sharpness, and this is a process that left a particularly strong impression on me.
He said he had learned roughly how to do that from his seniors, but he had never tried it yet, so we decided to try it together soon.

実のところ僕自身もかなり以前から、プロに教わりながらその方法での刃付けを練習していましたが、手の角度を均一にすることが本当に難しく、練習をする度に挫折してしまいました。
そんな経緯があったので、研ぎ始めたばかりのスタッフがそれなりに腕を上げていることを知り、頼もしく感じました。
ただ、やはりどうしても手研ぎには時間がかかり、たくさんの数を仕上げることはできません。
つまり製造コストが上がってしまうということなので、研ぎ職人の入門編として比較的安価な包丁を仕上げようと思えば、採算が合わないということになります。
そこで、以前職人さんから教えて頂いた、ヒラマイ（水平に回転する円形砥石）やグラインダ等を使った仕上げを彼に提案しました。
手研ぎでの本刃付けが全くできなかった僕が、生まれて初めてそれなりの切れ味を生み出すことができた、自分の中で特に印象に残っている作業です。
そのやり方は先輩からもざっくりとは教わったそうですが、まだチャレンジしたことがないとのことなので、近々一緒にやってみようということになりました。
