As mentioned above, the new circular whetstone is a narrow type, but the conventional Sakai standard type, which is wider, would be much heavier, so we can imagine that the replacement work would be quite dangerous.

前述の通り、今回新調した円砥は幅の狭いタイプですが、これより幅の広い従来の堺標準のものだとずっと重たいはずなので、取換作業も相当危険なものだろうと想像がつきます。

Mr. Hakui, a sharpening craftsman who sharpened Fujiyama Honyaki yanagiba, passed away six or seven years ago, and until just before his death, he was doing the sharpening work alone.
His workshop was a small building that had been converted from an old Japanese house, and I remember Mr. Hakui telling me at the time that he had completed the process of replacing the circular whetstone.
It may have been worked by several people at that time, but he must have been already over 80 years old at that time, and he has tremendous horsepower.
Through this work, craftsman A said, ‘I wonder if we really need to use such a ridiculously large circular grindstone?’.
This is the very concept of ‘start by denying precedent’ that I recently learned, and I believe this is necessary for innovation.
We will continue to search for safer and more efficient methods.

6~7年前に他界された、フジヤマ本焼き(柳刃)を研いで下さっていた研ぎ職人の伯井さんは、亡くなる直前までお一人で研ぎの作業をされていました。
その工房は、古い日本家屋を改造したような小さな建物でしたが、当時伯井さんが『砥石の交換作業を完了した』というようなお話をされていたことを思い出します。
その時は数人で作業されたのかも知れませんが、当時はすでに80歳を超えていたはずなのに、ものすごい馬力です。
今回の作業を通じて、職人Aは『本当にこんなバカでかい円砥を使う必要があるのかなぁ?』と言っていました。
最近学んだ、まさに『前例の否定から始めよ』の考え方で、イノベーションにはこれが必要だと思います。
より安全でより効率の良い方法を、今後も模索していこうと思います。
