Renewal of circular whetstone (1)

We are currently renewing the circular whetstone (circular grinding wheel) used in the very first process of knife sharpening (rough sharpening).

円砥のリニューアル (1)

現在、包丁研ぎの一番最初の工程（荒砥ぎ）で使用する円砥（回転砥石）のリニューアルを行っています。

Until now, we had continued to use an old circular whetstone that was given to us by a craftsman we knew who was no longer using it.

Since that was running low, we decided to purchase a new one for the first time.

We have received the circular whetstone that we ordered in advance and are replacing the old ones, which is a very difficult task.

これまでは、知り合いの職人さんがもう使わなくなって譲り受けた、古い円砥を使い続けていました。
それが残り少なくなったので、今回初めて新調することになりました。

事前に発注していた円砥が届き、古い円砥からの取替え作業をしていますが、とにかくこれが大変な作業です。
