Suffering in the sharpening process

The staff sharpening KS-01 has been working hard every day, learning a lot from senior craftsmen since they started sharpening.

KS-01を研いでいるスタッフですが、研ぎ始めた頃から先輩の職人さんに色々と教えてもらいつつ、日々研ぎに励んでいます。

Of course, compared to when he started sharpening, his skills have improved, and his work efficiency is getting better and better, as measured by the “number of pieces per day,” but for some reason, he seems to have fallen into a situation where the efficiency has dropped a bit here.

There are individual differences in knives before sharpening, so I understand that the situation may affect the process, such as the amount of time it takes.

However, there is no point in rushing to finish the work and then heading in a direction that will result in a drop in quality, and it is also no good if he becomes impatient with growth and hate sharpening itself, so I will continue to watch over the work so that he can work at your own pace.

もちろん研ぎを始めた頃から比べると腕も上がり、『一日あたりの丁数』という尺度で測りながら、作業効率もどんどんよくなってはきているのですが、なぜかここにきて少し効率が落ちるという状況に陥っているようです。

研ぐ前の包丁には個体差もあるので、その状況によって時間がかかるなどの影響を受けることもあるとは思います。

ただ、急いで仕上げて品質が落ちるような方向に向かっても意味がないですし、成長することを焦って研ぐこと自体が嫌になってしまったもダメだと思うので、引き続き自分のペースで作業ができるように見守っていきたいと思います。
