I also decided to spend more time with him myself and see the knives he had finished, whereas until then a senior employee had taught him almost single-handedly.

The knives he sharpened were more “knife-like” than I had expected.

There are a number of points to take care of for the knife as a whole, and of course there were still a few areas that needed improvement.

However, there were not a few areas that met the criteria well, and above all, the atmosphere of ‘carefully sharpening knives’ was fully felt.

In a sense, this can be the most important factor in creating a good thing.

また、それまでは先輩社員がほぼ一人で教えてくれていたところ、僕自身も彼に寄り添う時間を増やし、彼が仕上げた包丁を見る機会も増やすことにしました。

彼が研いだ包丁は、僕が思っていた以上に『包丁らしく』仕上がっていました。

包丁全体としては気を付けるべきポイントは何か所もあり、もちろんまだまだ改善すべき点はいくつかありました。

ただ、しっかりと基準を満たしている部分も少なくなく、何より『丁寧に包丁を研いでいる』という雰囲気が十分に感じられました。

これはある意味、良いものを生み出すための一番大事な要素になり得ます。
