Subsequent status of young craftsman B<\/h2>\n

Our young craftsman (the second person in charge of sharpening), whom we introduced in our articles \u3010No.6\u3011<\/a>,\u3010No.7\u3011<\/a>, and\u3010No.8\u3011<\/a>, is still continuing basic practice, and has reached a level where he can ship knives in the mid-price range as products.<\/p>\n

Currently, he is sharpening mainly molybdenum steel (mono steel) Wa-Gyuto.<\/p>\n

In the beginning, there were many cases of rough hairlines were remained or the hairlines were not parallel, but these have been improved more and more.<\/p>\n

In addition, the jaws (ago) of the knives were sometimes inevitably too thin, making it difficult to ship some items as they were.<\/p>\n

At that time, I suggested \u201cchanging the shape,\u201d even though it would be a different knife, and showed him a picture of the finished product.<\/p>\n

He was then immediately challenged and was able to create a shape that looks OK.<\/p>\n

As for the edge sharpening, he has continued to practice finishing by hand sharpening, and if he takes the time to sharpen carefully, he is now able to achieve a relatively high level of sharpening.<\/p>\n

In the future, I would like him to continue his efforts to improve manufacturing efficiency while maintaining quality, and depending on the situation, I would like him to try knives in a slightly higher price range.<\/p>\n
