The steel material is a three-layered Gyuto made of powder steel cladded with stainless steel.<\/p>\n

There are several types of powder steel used in the knife industry, but this blacksmith’s advice was that it is \u201ca relatively easy-to-sharpen type of steel.<\/p>\n

The equipment we have in-house, such as large circular grinding wheels, is mainly for sharpening carbon steel knives and is not necessarily suitable for stainless steel or powdered steel.<\/p>\n

Of course, we sharpened this sample using the existing equipment, but since the rough grinding was already done, it does not seem to be \u201cvery difficult to sharpen down\u201d as we feel.<\/p>\n

However, if we just sharpen the knife in the usual way, it will be simpler and have less impact as a kitchen knife, so we would like to explore various options, such as \u201cIs there any way to change the appearance of the knife itself?” “Or is there a way to keep the knife itself simple and differentiate it by the sheath and handle?\u201d.<\/p>\n
