As we continued to sharpen knives, which was the first step for beginners, we gradually became more confident as we overcame various problems through trial and error, and we were already filled with the desire to try our hand at forged gyuto in Sakai.<\/p>\n

When we were sharpening that Molybdenum Wa-gyuto, we received feedback that ‘the surface of the knife is flat, so the food you cut sticks to it.<\/p>\n

Therefore, in sharpening the KS-01, we are conscious of finishing the surface of the knife in a three-dimensional way to solve this problem (hamaguri-ba).<\/p>\n

Also, sharpening a knife with a large circular whetstone means \u201csharpening a knife with a convex-shaped whetstone,\u201d so if you are not careful, you will inevitably end up with a concave portion on the surface of the knife.<\/p>\n

With this knife, we have also taken care to avoid that as much as possible.
