KS-01 Development background (3)<\/h2>\n

When we discussed the sharpening process with our craftsmen, none of them reacted negatively, despite the possibility of becoming our \u201cfuture competitors.<\/p>\n

On the contrary, the atmosphere was rather welcoming, and I was able to learn a lot of \u201cinformation about machines and tools to be made\u201d from everyone.<\/p>\n

Based on this information, we devised the structure of the machine, and by combining commercially available steel racks and other components, we managed to complete a facility that looked like it could be used.<\/p>\n

We are very grateful to all the craftspeople who taught us so much.<\/p>\n

As a training ground for sharpening, we decided to start with he molybdenum Wa-Gyuto 225 (\u201cKaneshige\u201d), which we had been requesting from various craftspeople to sharpen for several years.<\/p>\n

These pre-sharpened semi-finished inventories stored in-house had already been thinned to a near-finished product in terms of thickness, having been automatically polished by machine.<\/p>\n

There are not many areas to reduce sharpening, and although it is a relatively inexpensive knife in its price range, it was a good enough knife for us to learn the basics of sharpening.<\/p>\n

The improvements made in response to customer feedback on the knives shipped at this time set the direction for the KS-01, which was to be sharpened later.<\/p>\n

(Incidentally, all of the molybdenum Wa-Gyuto 225 we have shipped over the past few months have been sharpened by a junior craftsman who is not on this staff.)<\/p>\n
